Each of them had the same spells and very nearly the same number of points in divinity, water and divine.
My opinion is that vitality is almost useless. The only benefit besides iron skin, is the semi-immunity to disease.

You can see that 10 vitality for a 12th level bishop added 4 hit points. That alone stinks, but for a 12th lvl valk, it only added 8. That's three levels of stat points burned for a measly 8 hitpoints. My opinion from all of this, is that from now on, unless I plan to get to 40th level, I will ignore vitality.
Unless I play a dwarf monk with iron skin. Talk about a tank.

p.s. if anyone reading this wants to email me save games, or stats, I'll put the info in excel and see if I can find out the actual number of HP/SP/Stam per LVL/class/Vit/Pie/spell/school kind of information. Getting the spell points correct will be a nightmare so don't hold your breath.
