Stellaris is an interesting game. You know it has variety by the fact that I started 5 games simultaneously because I want to try different strategies.
It is minimalist in its way. And it's not a game you play to win. It is sandbox and you have to create your own story. I have a lot of fun with it.
Sometimes I just spend time creating more factions so that I can encounter them in my games.
