Personally I prefer to have max hps turned on. Not because it necessarily makes the game easier, but because it reduces the amount of re-loads you have to do after death. Also it has to be said that at the higher levels having a mage with only 30-35 hps is a royal pain in the arse, one half decent area effect spell and he's toast - often literally.

For HOF mode I don't think you have any choice - unless you can find a way of winning combats without actually going into combat!! (By the way this is possible.....)
