I would actually go the other way. Start as a mage for the first five levels, then switch to samurai. Samurais don't get spells until level five.

The reason for this is that a class can't improve in a skill that isn't normally available to it. Therefore, your mage could not improve in Swords or Critical strike. With first level numbers in these skills, your mage wouldn't be very useful with a sword, and would get very few critical strikes. However, a samurai can improve in all of the magical categories that a mage gets. I think that the magic growth would be slower than a true mage.

As far as armor, there is no armor skill (other than shield), so I don't think a samurai switched to mage would be able to wear samurai armor.
