If you're talking about any figther-ish type, then the monk rules (just carry a non-magical weapon at all times, just in case).
If you mean fighter kit, then it has to be the Kensai. You don't win BG2 by avoiding damage - you win by dishing out massive amounts of damage very quickly. Who better then the Kensai, who can hit just about anything at high levels? With such a powerful character, they *had* to put in a no-armour restriction, or it would have been waaaaaaaaaaaaaaaay unbalanced.
