Include in your proficiencies dual weapon wield, single weapon wield, dagger, and club. The werewolf's paw is considered to be a dagger for proficiency purposes. You'll want single wield for the AC and critical hit bonuses with the paw. The club proficiency should be used for Pitchwife, a +5 club that is fused from Blackblood and Gnasher - you'll have to d/l the Weimer Items Upgrade Mod to get this. You'll want this because there are some things the werewolf/greater werewolf paws can't hit - they are considered to be +2 and +3 respectively. Finally, you'll want the dual wield so you can use Pitchwife in your left hand and not have to revert to human form.
I wouldn't dual to fighter if I were you. The greater werewolf form is much more powerful (at least until ToB and the various HLAs). Give him Boots of Speed and the Amulet of Power and watch him cut through his enemies like a runaway buzzsaw.
