i'll admit i know very little about modding but it seems to me, you would have to create an npc, make a kit(packmule) with 100% magic and physical resistance, no attacks and no equipable items(if you can restrict clerics from using edged weapons and mages form platemale you can restrict that it would just take time)
then set his stats to something like 22 str, 3 everything else and give him a picture of a mule and a basic fighter doll.
the main problem i see is he sucks up 1/6 of your expiernce
You really want more space, cheat in another bag of holding like Seraph said. That's a whole lotta work for extra spaces.

Just thought of this, He can disarm traps very cheeseily, maybe give him 18 constitution so you have to worry some
