I am soloing with a Monk. The summons are very important. I most of the occasions you don't need them if your fighter hack&slash well, but there will always be a situation where you need some additional distraction.
The Djinni is very usefull because he can cast stinking cloud. That gives you the opportunity to knock down a difficult opponent and attack him when he is defensiveless.
Also look for those items that either give you magical protection and/or let you cast spells. The potions are also very usefull giving you magical protections against fire, etc.
Finally the best protection of the enemy mages will wear down, it's just a question of time. Hence, see how you can survive that time (run away and come back later, get invisible (potions or hide in shadows) and run into a corner where he can't see you or use the cloak or sword that grants you indectability ...)
