Try a chaotic evil barbarian

I tried one, and by the time I had hit level 40 and finished ToB(taking all possible evil routes for challenges) he had a natural CON score of 22 and well over 300HP. Combine this with a permament 40% physical damage resistance (see Dundee's post regarding the Defender of Easthaven +3) the rage ability and plenty of hardiness abilities and even on insane difficulty it would take an entire army of enemies to take him down! Good fun!
