I was actually thinking of starting a party very similar to that:
PC - Ranger (no kit)
Minsc
Keldorn
Anomen\Jaheira (depending on which one I can tolerate)
Nalia
Jan

I'd say start druid, then dual to mage. I'm not sure if you can dual a druid though. If you go single-class mage with that party I definetely recommend specializing.
