Well, this is what I'd consider the "best" party, and I'm sure it's been done a million times:
Me (Fighter->Thief)
Imoen (Thief->Conjurer)
Kivan
Minsc
Branwen
Coran

Other worthy folks to have would be Ajantis, Yeslick, Xan, Khalid, etc.
