HEARTY, EASY VEGETABLE BEEF SOUP
Heat two quarts water, with 1 TBSP salt in it to a boil.
add:
4 potatoes, peeled and cubed
2 carrots, sliced into discs
2 stalks celery, chopped roughly
1 large onion, chopped roughly
1 14-oz can of chopped tomatoes
2 lb. stew meat, or chopped chuck roast
Bring back to a boil, then cover and turn the heat down to low. Simmer 1 1/2 to 2 hours. Serve
