The Aerie romance is automatic, about an hour after you first get her she starts up a conversation with you accompainied by some music, just be really nice to her and don't tell her to leave you alone or that she whines too much. Aerie being Minsc's witch doesn't do anything to the romance, it just makes Minsc go beserk if Aerie is killed in combat.
