Well, most protection-oriented spells wear off after a few rounds or turns, so if you retreat when you see the mages cast their spell triggers and wait for them to wear off, that should do it. The only thing that won't wear off easily is Stoneskin; you just have to battle your way through it.

One other thing: put profs in bow (preferably short bow since there are much better shortbows than longbows in this game: Gesen Bow and Tansheron's Bow), and invest in a LOT of arrows of dispelling. This will do all the breaching, etc., that you will need. (Successful strike is tantamount to "Dispel Magic.") That's how solo archers do it.
