I normally do both tunnels in the one day. Chaotic Commands on your best fighter gets you through the mind flayer tunnels. Just send the tank by themselves. And the Shield of Balduran or the Cloak of Mirroring keeps you safe from the beholders. Beholders don't stand up to a concentrated attack for long anyway.
