Are you sure you want to do this?!? =:0 From my own experience the romance dialogues started for me right after chapter 1 was done. At the time I only had Jaheira. Then I picked up Aerie and it wasn't too long before she started in. The thing is that each one is different and unless you pick the correct dialogue choice (sometimes there are as many as three answers that are okay) the romance is screwed. They say the Jaheira romance is the toughest (see spoiler below), but I found that if you don't answer her rough, but encouraging and yes even protective, it goes well. However, the romances remind me of trying to transverse a mine field! Try Viconia and you'll see! The romances do, however, add a very interesting dimension to BG2 and it truly is role playing.

Even Black Isle says that the Jaheira romance is the toughest and much of this is because of an event that takes place in the game that many people don't realize MUST be done to continue the romance. There is a time in the city when you'll come upon Xzar from B1 and in his arrogant way will ask you to go to the Harper's Hideout to find out what happened to his partner Monteron. IF you refuse or IF you decide to not continue with the quest then the romance with Jaheira is over. The thing is there is not really any dialogue at this time that would lend you believe it is important to courting her. However, remember that Jaheira is a Harper so it makes sense. (As if anything of the heart makes sense!)
