There are the other two, earlier, creator gods: Khepri and Apis, who both became one with Ra
There are also the fours sons of Horus: Duamutef, Hapi, Imsety, and Qebhsenuef, who together were the protectors of the parts of the body of Osiris

I think the dungbeetle headed God is Khepri. The word Scarab Beetle (i.e. dung beetle) derives from his name, but I don't know of any reference to a depiction of him with a dung beetle head
Also, Amon-Ra (Amen-Ra) is not the same as Amon (Amen, Amun). Amon-Ra is a composite deity made to link the seperate worship of the Amon and Ra.
Amon, is the patron god of Thebes and is considered to be one of the eight deities of creation, and Ra....well we know who Ra is
The interesting thing is that Amon-Ra was created as a link between Amon and Ra, but in late Egyptian Society, Amon-Ra went on to supercede both of them and became known as the Lord of the Universe
