Try the Almohads MagiK.. they're one of my favourite factions to play as.
The pigs in Rome you actually set on fire and send them towards the Elephants..but they can also turn and run right into your own men as well.
The best thing to use against the elephants in the demo (if you picked up the play as Romans mod) is light troops and skirmishers in a loose formation.. that is if you can manoevre yourself into a position to attack Hannibals army in such a way.
