After finishing the game as Scout-Guardian (1H expert), Scout-Sentinel (dual wield), Scout-Sentinel (1H expert) and Soldier-Sentinel (dual wield), I am starting a new game with dual wielding Scout-Guardian.
IMO, only Soldier-Guadian and Scout-Guardian can afford to dual wield because of the relatively high attack bonus and damage bonus (lightsabre specialization).
Soldier Guardian seems to be a good choice for pure fighter class but the skill points are too low and makes the game a little bit uninteresting, unless you are playing as a dark Jedi.
The other classes combinations are too poor for dual wielding because of the low attack bonus, which means you will miss a lot more and get hit pretty often.
For a dual wielding jedi, an overall "to hit" should be ideally at +29 or +30.
For a single handed expert, you should be able to obtain as high as +35 or better "to hit" bonus, which is sadly to say, a bit superior to dual wielding Jedis in term of attack bonus and defense bonus.
Nevertheless, I still like the ideal of dual wielding or using double bladed light sabers. Plus, they look cool and intimidating.
