It depends on your playing style. Paladins are extremely fun, get to heal people, cast priest spells, get saving throw bonuses, can turn undead, and are really nice to people. Various kits can cast a ridiculously high-level Dispel Magic, True Sight, Remove Fear, and are immune to a huge amount of effects, and can use the Holy Avenger (enough of a reason by itself). The drawback is that they're always nice to people and cannot overspecialize. The good side to non-mastery is that you end up able to use many more types of weapons, which is exceedingly useful in ToB, where there are many particlarly nasty dual-weilding combos. Fighters get levels faster, can specialize in weapons much more, and can be downright mean. They sacrifice all of the good paladin stuff for fighting prowess. Playing a paladin is much funner, but playing a fighter gets you a lot more power. It's your choice.
