Some of my favorites from "back then":
1. Ultima IV - Roleplaying, conversation, and more than just hack and slash. Great non-standard intro and character creation (loved that Gypsy with her "tarot"-style cards).
2. Wasteland - The great post-nuke RPG (finally followed up lo! these many years later in Fallout).
3. Wizardry I & IV - Wiz I was the first true "party" style game; I loved having a whole crew instead of just one. IV was a mind-bender in many ways, with multiple endings, and the chance to play Werdna, calling up monsters for help with fights.
4. Bard's Tale III - The best of the series. BT I was a bit too much like Wizardry; some even called it "Wizardry with better graphics".
5. Might & Magic I - Loved it for the many puzzles. Hated it for the unbalanced combat. I still have the 50+ (you read it right, fifty plus!) maps from this game. Let's be glad all the dungeons back then were the same size and shape.
There are others but these are the ones that come to mind right now.
