I'm fairly sure the answer is no and no. Although to be honest I just played the game without getting too involved in the game mechanics - without the BG2-esque combat details I'm lost

I really wouldn't spend too much time on defense though...I certainly never did. Once you can craft a nice constant effect 'give health' amulet or somesuch it will never really be a problem and you should be destroying them before they get that close.
I can never ever really recall being hit by anything fiery...it's either metal and pointy or magical in nature. Magic resistance would probably be a good idea (protecting you against magical fire as well), because as a mage you'll struggle against a particular high-level magic-using creature which is pretty resistant to your spells and you may have to slug it out.
