Clay Golems are only hurt by blunt weapons of +2 enchantment or greater. That means get out your slings, staves, clubs, hammers, etc... i.e. priest work. Fortunately they don't have much in the way of HP, so Anomen and Jaheira usually made short work of them.
Adamantine Golems with maneuvering room are a bit trickier. My method was to stick Lahretia (sorceress) in the front rank with stoneskin, mirror image, blur, etc.
Lahretia: *waves staff towards Golem, occasionally doing 1 damage* *casts MI or SS as needed* Dang, only six stoneskins left...
Golem: *makes futile attempts to hurt the near-invulnerable sorceress* Crush... crush... crush... uh.... crush...
Everyone else: *POUNDS THE GOLEM!* Take that, turnip hating scum!
I had a couple slow poisons for the occasional botched saving throw, but this generally worked very well with little damage to the party.
