If you add the mod, you can still play saved games with the new mod.

If you have a save with a mod installed and then you remove the mod, you can run into problems if you used the features the mod added. Example: You use a house mod. You put all your stuff in the house. You remove the mod before removing your stuff from the house. Your stuff is gone now.
