Here are a few of my favorite Plugins.
Most of them dont really change the gameplay but
they do improve the game IMHO.

First the 'Real Signposts' Mod by ElBundee
This plugin is great! It replaces the existing signposts with ones that actually have the names of the towns on them so you can read them without walking all the way up to them.

Second the 'Quick Char' mod by Bink
This mod is a 'must have' for those of us that like making new characters all the time . When you start a new character you dont have to go through all that opening scene. When you wake up on the boat, it will ask you if you want to do a quick character setup. After clicking yes, you will be taken through all of the character creation windows and given your papers and sent directly to the Officer that gives you your orders. (hint you will want to go back and get your daggar and ring and stuff)

Third the official 'Bitter Coast Sounds' plugin released by Bethesda Softworks.
It really adds even more depth to the game.
Plus the dragonflys are cool.

Fourth, 'Animal Realism' by Sal Maker
This mod addresses the fact that the animals behavior in Morrowind is ridiculous.
Smaller weaker looking animals will run when attacked. Diseased and Blighted animals will attack. Larger 'meaner looking' animals will act as normal (and will actually be stronger) Full details are in the readme file.

All of the above are available from Morrowind Summit

'Magic Item Change' mod by Swampthing
This is not a plugin, but it gets rid of that glowing effect on all of your enchanted items.
this one is available at http://www.morrowind-mods.com/
