Advancement in the game is really quick, so the best answer in my opinion is just choose a race/sex that you think looks good cosmetically, and then forget about it. The class you choose really doesnt' mean anything in the long run, as its fairly simple to become a master fighter/thief/mage by the end of the game, and you can join as many factions as you like. The only thing your class does is determine what you're good at at the start, and the increase in how fast skills that you major/minor in isn't really that significant. I suggest that, to maximize level ups, choose a bunch of skills for major/minor, hopefully skills which raise slowly like Alchemy, Enchantment, and Armorer, and then choose a specialization like Stealth so that these skills raise even slower, not belonging to that specialization. This is a good thing. Why? Because if you put combat skills and armor skills in Misc. when they raise they won't add to your level up total, only major/minor skills do. Why is this good? Because when you finally DO level up, raising those hard to raise skills, you will get massive stat bonuses due to all the misc. skill gains! +15 stat points is far better than a mere +7
Just remember this simple addage. In Morrowind, a class is just a frame of mind, nothing more. Be good at everything, in this game its a piece of cake to do, and allows you to solve problems anyway you want. Slash them to ribbons, blow them up, or stab them in the back, up to you.
