OOC: IIRC in the Dungeons Masters Guide under undead and level draining, can't recall exact spot, but if you insist on Uber-ing I'd be more than happy to look it up, it states that an undead creatures level drain is a conscious act that can only be activiated if it successfully hits someone/thing, allowing a monk to attack an undead beastie openhanded without losing all his/her levels, until the undead actually hit the character.
