Nope, all monsters don't have set hit points. Each monster species has a certain number of hit dice. These dice are rolled for each individual monster in the species to determine the number of hit points it has. So you could run across a monster that has 200 hit points and later come on the same type of monster that only has 100. Generally though the ranges are pretty close.
