Just keep 'em handy and use them in the situations they're best suited for. For instance, the Daystar (the one from the Lich's tomb) is very good against undead, but for living enemies there are better swords around. So you use Daystar if you come across a Vampire or some such. And Lilarcor offers immunity against Charm and Confusion, but for damage and THAC0 bonuses, again there are better swords. So you just draw Lilarcor if you face an enemy that might try to Charm or Confuse you, like an Umber Hulk.

EDIT: Which NPC you give them to doesn't really matter, as long as he/she has a skill in using the correct kind of sword. You gave the Daystar to Imoen? No problem, as long as she has a proficiency point in long swords.
