One of the most enjoyable games I played was with an Evil PC. Chaotic evil. I spent a lot of time pretending to be nice and then just killing the NPC who'd hired me after I had gotten the reward. This was particularly fun in the Underdark

The Durid Grove quest was my favorite evil quest. Truly diabolical and destructive without having to hack and slash in order to be evil.
I think the Fallen Paladin quest also has an evil option. Remember -- never negotiate.
Oooh, and I almost forgot the human flesh armor quest. Do some investigating once you find the human flesh and see if you can get the evil human flesh armor.
