One HUGE difference is that the spells that a mage/sorceror can choose from are completely different to those that a cleric can choose from. Clerics tend to have healing/protective/undead related spells whereas mages have 'Magic' spells.

As far as Sroceror vs Mage, the key difference is that the Sorceror doesn't have to 'memorize' spells. Rather, the spells the sorc knows are always available (up to a certain number/level). The sorceror learns chooses to learn new spells at level up, rather than from reading scrolls like the mage does. This is HUGE--if you play a sorceror, you'd better make damn sure you know what spells to choose! Once you have chosen a spell, you cannot swap it for somehting else later.
