As far as I know, you'll always lose the dexterity point if you're being good, and you'll also have to give up another point earlier on in the Asylum. You can, however, get other points in return. If you do all the quests the good way, you'll end up with an additional wisdom and charisma.
In Baldur's Gate 1, Tales of the Sword Coast and Throne of Bhaal there are also some 'hidden' tomes which allow you to increase a certain characteristic value by one point permanently. These are present for all six, so you should be able to restore your stats in ToB (of course, evil characters also get that tome)

The only other way to avoid losing your dexterity point is by using CTRL-J (see the Ironworks main site for more on this) to jump past the middle door. Naturally, this is cheating.

I usually play with an Archer, and the dex point was a great personal loss
But, the game ended soon after
