You should be able to go through the game with a fighter/thief. Cause then you'll have a warrior and a rogue.
The only problem might be that then you cant cast any spells.
So maybe you should start a fighter/mage/thief from the start, or start up with a fighter/thief or fighter/mage and then dual to mage or thief later.
I'm not sure that you can do this, though.
