I don't ever remember running into her outside of the Bodhi dungeon either. Vampires can rip you up quickly if you aren't prepared with negative plain protection spells. Having enough spell slots to prep every member of the team with that spell is one of the reasons I always try to keep two clerical spell casters in the group.
I was especially prepared for the vampires my last trek through SOA; I played an undead hunter paladin, gave Anomen the plane protection spell, and simply used the two of them to smite every bloodsucker I encountered.
