I was trying to pickpocket sir Sarles too, but he had no ore with him.
Nothing except a couple of coins! No upgrade for me this time...
So I would suggest to save your game before giving the ore to Sarles, 'cause there is a good chance he won't have any ore in a moment. He seems to desintegrate it immediately somehow...
