There are a limited number of items your apprentices can make, a couple of them are great, ring of wizardry and staff of power. A couple lesser items can be made, such as the wand of apprentici, robe of apprentici, etc.
In my opinion, if you figure out how to make the ring of wizardry, you have it covered. The staff of power is nice, but you can get a better staff later in the game, you can't get a better ring of wizardry. If you can get the ring and some lesser items you have the apprentice quest done. It doesn't matter if they die, They can't make anything past those items anyway.
