Don't worry about summoned critters. When the spell wears off they get unsummoned. Besides, they're only computer sprites, not real creatures. As for tactics, my favourite was my sorceror:
Haste
Spell Shield (Abjuration school)
Tenser's Transformation
Staff/Magi (or Black Blade of Disaster if you can cast it)
Kick his ass!
