Best thief race would be halfling, the class depends on what you want you character to do.
most people will probly suggest a dual with fighter or mage, for the attacking streagh and spell power once you improved your lock and traps skills to around 60-80%. multi might not be a good ideal due to the slow level gain, but the chocie is really up to you.
