any part-wizard will have a very easy time, at least in soa... with staff of the magi and cloak of non-detection, you can pick your battles. even if you should chose a very restrictive specialist wizard with intelligence 9, the game will be easy to finish... however, you might find it challenging to do all the quests available.
if the restrictions are as crippling as they sound, i´d probably say wizardslayer - the beastmasters restrictions sound worse than they are: there are very decent clubs available in the game, and fairly early on, they have access to all the ranged weapons, summoned animals are very helpful in a solo game and, most important of all, they have decent stealth.
any class with stealth shouldn´t have too much trouble finishing the game, and since clerics can cast prodigious amounts of sanctuaries and barbarians can run away too well, that leaves the fighter class.
berserkers and the true class don´t have enough crippling drawbacks so pick one of kensai and wizardslayer
i finished the game with a kensai with minimum stats but wouldn´t recommend it to anyone - not only is it difficult but it is also slightly boring.
