I backed myself into a corner. You'll notice that the summoned creatures get waxed rather quickly. I summoned more to block the advancing knights. I basically teamed two characters against one knight and two against another, had one character summoning creatures, and the other trying to slow down any knight that avoided the creatures (this last one with a very low AC and stocked with lots of healing potions).

Once the first knight fell, I moved on to the next and so on. I'm pretty sure I resurrected a character or two, but the battle went fairly smoothly.
