I'd just go with six. There's plenty of EP in this game, so you don't have to worry about levels.
My party's usually fighter/mage, fighter, fighter/druid, mage, cleric, thief/illusionist (or me, Korgan, Jaheira, Edwin, Viconia, Jan).
