couple reasons
when you start getting higher levels you only get a few more points per level up (check your exp tables for more details)
and experience is calculated using a dice so you can't get the max real easy. alternatively go in to settings and put it down one level so the fighting and experience is the same but you get max health pts when leveling up and always learn spells
