I approach each encounter as a training opportunity (Duh!) for the Party. That means if monsters are not a real threat, I will "train" by using less powerful spell-casters, or powerful spells that don't currently allow high-level casting. I will also use the spell-casters as fighters and switch to alternative weapons at such times.
Besides maintaining a touch of suspense in the battles, it broadens the skill-base of the Party - especially with regard to Magick.
