I generally build up Piety for mainly-magic-users (Mages, Alchemists and Bishops for me) to get more spell casts per battle. I think 70 is a good number. A high Piety char can end up with 500 points in a magic element (which is more than you need) so I don't go much above 70. The Iron Will skill you get with 100 doesn't seem to do much later in the game.
