I changed an 18 or 20 (somewhere around there) bard to a thief (don't remember why, prob. to get stealth or l&t up) for one level then to alchemist. the game was pretty much over by then. I think I have around 5 alc levels and prob 100 alc skill from mixing (boring), but I haven't changed back to bard yet (so I can use bard stuff). not sure I will or not.
A real benefit is being able to cast stamina on yourself (doublely so while silenced) and not needing to hog equipment slots with potions. I suppose you could just take one level (earlier than lvl 18), cast water spells (prob. limited to combat acid and stam) enough to get 15 skill then mix potions until you are tired. having an extra cure wounds isn't bad either if you do this early.
If I made fighter instead of thief I could run a bar, mix drinks, sing songs and be the bouncer. Pickpocketing myself just doesn't seem productive.
