With an all stealth party, monsters often will stand around definding, instead of attacking someone. If they attack, the +9 AC will increase the chance they miss, but if they hit, they do normal damage.
I don't like stealth training. I did it with my fighter-bishop duo, and the game became quite boring later.
If you think the monsters hit you too much, why not just change the difficulty to normal (or even easy). This also makes the game much easier, and doesn't use up that much time.
