Yes, you can do that. You can choose the berserk option and fight bare-handed for double-damage attacks. For best results, I recommend a native score of martial arts 100, a high critical strike, and powerstrike. Remember monks (better than ninja) get a bonus to MA that will be lost when you change class.
I tried this just now and the results were quite good. Keep in mind that I used an enhanced (very enhanced) character to save time.
