The Rynjin do present quite a challenge.
To eliminate the effectiveness of their spells, use spells like soul shield (resists mental [insanity] and divine spells) and magic screen. These two will be availible to Priests and Bishops, and I highly recommend them.
The Mage (and possibly Alchemist?) can case Element shield during combat, will which provide valuable protection from magic as well.
Fire spells seem to be the only real offensive spell option when fighting them. Spells like blinding flash and firestorm might be worth a try. However, I believe spells like Bless and Superman, which enhance your party's fighting prowess, are much more useful in this type of situation.
Also, consider fighting the battles from within an enclosed area to avoid being outflanked will make life easier.
