The coyotes were a metaphor for Vincent. Hunters out of place and lost, but not by much, and nevertheless confidently stalking through the night.
In one aspect, the movie was a large tribute to LA. The discussion between Pinkett and Foxx about how to best get across town, etc. The movie took a lot of lazy, slow looks at the city, more than is normally allowed in Hollywood formulae.
