Well, HotU adds:

Epic levels-You can now level up to level 40.
New Prestige Classes: Dwarven Defender, Champion of Torm, Red Dragon Disciple, Shifter, Weapon Master and Palemaster.
Tons of new spells and feats.
New enemies like Beholders and Mindflayers.
New tilesets.
A new Official Campaign, and the best yet by far.
